This is my version of a pasta soup, this one is tummy filling, nutritious, tasty and warm-you-to-the-bits soup that can be a complete meal.

Ideal option for brunches or light dinner. Sit in with your family and have this soup on a cold winter night alongwith some warm conversations.

Ingredients
250 gms Roughly large bowl of chopped vegetables
I used Baby corns, Red Bell Pepper, Yellow Bell Pepper, Capsicum, French Beans, Cabbage and Spring Onions; you can add Carrots, Peas, and Mushrooms too.
Goal is to have lots and lots of veggies to make it a healthy meal
100 gms - Pasta (Ready to cook)
3 tablespoons - Olive oil
1 tablespoon - Tomato Sauce
1 teaspoon - Red Chilly Paste
2 tablespoon - Black Plum Vinegar
3-4 leaves - Fresh Basil
2-3 stalks - Fresh Thyme
3 cups -Vegetable Stock
Steps
Boil water in a pan with salt; once the water comes to boil add Pasta and cook for approx 5 mins, till the pasta is cooked and soft. Drain the water completely and add half teaspoon of olive and keep aside
Roughly chop the vegetables just ensure that size is small enough to be held in one scoop
Heat a wok and add olive oil. Add the vegetables including green part of spring onions and sauté for few minutes till the vegetables are cooked
Add pasta to the wok and mix roughly.
Add tomato sauce, Red Chilly Paste and vegetable stock and cook for 4-5 mins till you get a boil. If you want thicker soup then add two tablespoons of cornflour in water and add it to the wok.
Add salt, note that all the sauces you are adding will have salt in them. If you are unsure taste before
Add vinegar, basil leaves and thyme stalks, cover and simmer for 4 mins
Serve hot with fresh basil leaves on top
Sauté Boneless Chicken pieces with the veggies to make a non-vegetarian version of this dish
